½ lb of orzo – 3 qt of water, 2 tsp salt
2-3 tablespoons of Fresh basil Pesto – Uncle Giuseppe’s
½ cup of cut cherry tomatoes
¼ cup of cubed black olives
5-10 chopped basil leaves
1 tsp of ground pepper
First thing is to fill a pot with 3 qts of water and bring to a boil
Once boiling add 2 tsp of salt and add ½ lb of orzo
While this is cooking, cut cherry tomatoes in thirds and black olives in cubes.
Once the orzo is ready, drain the water fully and put in serving bowl.
Add 2-3 tablespoons of fresh basil pesto (our favorite is from Uncle Giuseppe’s)
Mix in tomatoes and olives.
Add basil leaves and pepper for taste and ENJOY!
Seems like the most perfect, yummy but healthy dish!
