A Simple Salmon Recipe for a Dinner for Two!

Ingredients:

  • 1 pound salmon filet
  • 1 bunch of asparagus
  • 4 tablespoons of olive oil
  • salt and pepper
  • 1 lemon, half sliced thin, half juiced
  • garlic powder
  • 2  tablespoons of butter

Asparagus:

  1. Preheat oven to 400 degrees
  2. Put asparagus on a baking pan
  3. Pour 2 tablespoons of olive oil over asparagus
  4. Sprinkle salt, pepper and garlic powder
  5. Mix well making sure each is evenly coated
  6. Put in oven and cook for 30-35 minutes.

IMG_7562Salmon:

  1. Slice filet into large slivers, 1-2 inches wide
  2. Sprinkle salt and pepper over each filet
  3. Heat olive oil in medium sized skillet on medium high
  4. Cook skin side up for 3-6 minutes or until flesh side is golden brown
  5. Flip over carefully
  6. Cook for another 2 minutes
  7. Add the lemon juice and butter in the pan, stir around each filet for 1 minute
  8. Remove from skillet, peel off skin carefully
  9. Garnish with lemon slices
